    Cooking in Colorado

    In 38 years, since the first time I ever baked anything, I never had a cake fall, until now. In the past few years since my sons have grown and moved out of the house, I’ve reduced my baking figuring they aren’t here to eat it and I don’t need to eat it. The sweet things in life don’t always go to your hips, to me, they go to my waist. So if I gain weight, I don’t realize it until the last minute. How’s that, you ask? It’s like a teaser….I can pull my jeans up over my hips, thinking the whole time they’re going to fit, until at the last moment when I actually try to button them and they don’t, won’t, no way are they going to fit!

    But the other day I thought it would be nice to bake a Pecan Cake. I could always push it onto the guys at Associated Building & Remodeling where Dalton works, so I wouldn’t gorge myself on it.

    As always, I make my cakes from scratch, usually from a recipe that’s in my head, a handful of this, a dash of that, you get the picture. I’m an old fashioned cook/baker.

    So, I whipped up my favorite cake recipe, added the pecans, and put it in the oven to bake. A little while later, much to my surprise, I watched it as it sank in the middle. Now if the hunting guys were here, they would have thought I seen yet another elk up close and personal with the animations my face contorted. It never dawned on this blonde head that I now was baking at a higher altitude. When we first moved to Colorado, I always said Dalton needed to buy me a tee shirt that read, “Caution, dizzy blonde at high altitudes!” Now I am doomed for the tee shirt now needs to read, “Caution, dumb blonde at high altitudes!”

    So, today I decided to buy a cookbook. I found a great one, highly recommended, on Amazon.com. It’s called, “Pie in the Sky”, by Susan G. Purdy. The cookbook for baking at high altitudes is just what I need before the holiday season is upon us. I’m so proud of my purchase, for now my cakes and pies will be just downright ‘purdy’.

      I never thought about the challenges of cooking in high altitudes. I hope your new cookbook helps.

      yumm, i like the crust. i didn’t know that baking at high altitude would need a pie in the sky cookbook :-) i’m not an expert in baking. still learning to bake.

      When I first moved to CO I had issues cooking as well. Most of the packages I read had different cooking instructions for high altitude so they came out okay, but others were a big mess. Thanks for sharing this cookbook. I will have to check it out.

      Cooking at altitude is just a case of adapting. Lots of cookbooks in my own library has intruction for cooking at altitutde. Until now I didn’t think anyone would bother. Well, the book is the secret to good home baking it seems. Us lowlanders still have big competition with you in the baking stakes it seems.
